Finca Los Naranjos is located in Vereda Cardal, Acevedo, Huila, Colombia, and is managed by José Peña, a 41-year-old, second generation coffee producer. The farm spans 7 hectares of land, with José managing 3 of those hectares at 1,700 m.a.s.l. Here, he cultivates 12,000 trees of the Bourbon Rosado, Supremo, and Castillo varieties.
José’s process begins with selectively harvesting ripe cherries, which are left in bags to ferment for 24 hours before being de-pulped. The parchment is then placed in barrels for an additional 48 hours, washed, and dried in a marquesinas for 10–15 days, depending on the weather.
